Spaghetti Squash - low carb veg recipe ~ by L Batra

Place spaghetti squash in microwave, you can cook it in the oven instead--but nuking it is like steaming, no oven-burn and no taste/nutrient loss from boiling). PRICK IT ALL OVER WITH A KNIFE OR LONG-TINED FORK FIRST! Cook until soft and steaming.

While squash is cooking (10-15 minutes if I remember correctly), sauté fresh garlic in oil (olive is good).

Using gloves/mitts, cut squash in half and scrape out insides.

Add garlic and mix.

Eat as side dish.

 

Soy Protein Shake - low carb veg recipe- for 2 persons

One cup plain yogurt (whole fat)
One cup unsweetened soy milk (you can use milk if you wish)
3 Tbsp whole flax seeds (optional)
2 Tbsp soy protein powder (vanilla flavored or plain)
1/2 tsp (white powder) stevia (or to taste)
Several Tbsp fruit or to taste (try a lower carb fruit like strawberries or blueberries)
If you don't use fruit you may want to add a few drops of vanilla or a no-carb natural flavoring. Banana is good.


Stick in blender and blend until smooth and fully mixed.

The soy milk has 4 grams of carbs per cup and the stevia and soy protein powder have zero (more or less). Plain yogurt has 1/2 of the carbs listed on the label because the bacteria gets counted as carbohydrate.
